Look what I can do!

Yes, I did. You heard it here. KT can make bread. . . and eat it without vomitting. I don't know what my problem was. I was given numerous bread recipes over the years, but I tell ya, no matter what I did, I could not make them turn out nice, or they'd turn out really pretty and taste horrible. I was telling my "bread-issues" to a girl in my ward and she gave me her Whole Wheat Bread recipe. I was nervous about the whole wheat, cuz I've used it before and failed. So I tried using just regular unbleached white flour, just to practice with it, and holy cow, it worked. Some of you may think, "wow KT . . .bread," but I don't care cuz this is a huge milestone for me.
I think I might just be ready to start using my wheat grinder and making wheat bread (or maybe I'll make a few loaves of white first just to make sure it wasn't a fluke).

Whole Wheat Bread
Makes 2 loaves
1 3/4 cup water
1TB Yeast
1tsp. Sugar and
2 ½ C. Whole Wheat Flour
Mix till smooth, then add:
1/3 C. Whole Wheat Flour
3 TB + 1½ tsp. Oil
3 TB + 1½ tsp. Honey
Mix then add :
2 tsp. Salt
Mix till smooth.
Add 2 more cups of whole wheat flour slowly while mixing. Add additional flour as needed until dough becomes smooth and elastic. Sit 10 min in greased bowl. Take dough out and fold it into a round rectangle and cut in half and put each roll into a greased bread pan. Cover and let sit 45-60 min or until doubled in size. Bake 25 min at 350 degrees F.

Chocolate Costco Muffins mmmmmmm

My sister found this website that has the recipe that is closest to the Choco Chip Costco Muffins, so of course I had to try them. Oh my gosh they are sooooo good and moist and just so yummy so check out this site or just copy it from below. They are well worth it, and I probably will be making them a lot just I am a sucker for anything chocolate.

Big Bad Costco Chocolate Muffins

1 Devils food cake mix
1 (3.9 ounce) package instant chocolate pudding
3/4 cup vanilla yogurt (I have also used plain)
3/4 cup water
1/2 cup oil
3 eggs
2 cups chocolate chips

Preheat oven to 400 degrees (maybe my oven is just too hot, but 400 was burning mine so just keep an eye on them, next time I will probably do them either rat 350 or 375). Lightly grease muffin pan (this makes about 20 muffins) or use muffin liners. Set aside. In a mixing bowl combine cake mix and pudding mix. In a separate bowl combine yogurt, water, oil, and eggs. Stir the wet ingredients into the dry ingredients just until combined. Stir in chocolate chips. Fill muffin tins about 3/4 full. Bake 20 -22 minutes or until center springs back. Cool on wire rack. These muffins will store for a couple of days, if you can avoid eating them that long.

I FOUND IT!!

For the past few years I have been looking for a pizza dough recipe that I liked. To start out, I am not good at making any kind of bread recipe, (my mom's crescent rolls I wish I could make). I just haven't made it enough to understand yeast or something. When I lived in Washington the coolest grocery store (WINCO) sold balls of fresh dough for 98 cents and it was good, for one reason, I didn't have to make it. Anyway, leaving there also meant leaving the fresh cheap dough, so I had to figure it out and have tried many different recipes out, in the bread machine, in my mixer, but none of them were good. They were heavy, never browned, (even when I brushed it with oil) and just not good. (Randy would always say he liked it, but I knew better). Until today. My neighbor Julie had told me about a month ago that she had the best pizza dough recipe ever and I kept forgetting to get it from her until today. So I got and made and it and Oh My Gosh, the best pizza we have ever had, I even prefer it to going out to pizza. It was chewy and soft with just the right amount of crunch to it. It even browned and I didn't brush any oil on it at all. It was heaven in my mouth. Thank you soooo much Julie for sharing this recipe with our family, we are truly indebted to you because we like pizza and have it often. (now more probably). So I want to share it with all of you, (hope it's ok Julie if not I will take it off). Enjoy

Julie's Pizza dough
2 1/2 tsp yeast
1/2 tsp brown sugar
1 1/2 C warm water
1 tsp salt
2 TB olive oil
3 1/3 c flour (you'll need to add more till it's a stiff dough)
1. Dissolve yeast and brown sugar in water and let stand 10 min

2. Stir in the rest and knead
3. Put in greased bowl. let rise 1 hr. (or until doubled) punch down and let rest before shaping
4. Preheat oven to 425. Shape and put in pan. (I used two pizza stones) Let dough rise in pan for 15-20 min if not using a pizza pan/stone (I actually used a pizza stone and still let it rise for a bit). Add toppings and bake for 15-20 min.
